Red Curry Paste ( Nam Prik Gaeng Ped)

  • 1/2 cup chopped onions
  • 8 garlic cloves The Garlic Lady's favorite!
  • 10 dried red jalapeno chilies
  • 4 thin slices fresh galangal
  • 2 tablespoons chopped lemon
  • 1 tablespoon chopped cilantro
  • 1/2 teaspoon cumin
  • 1-teaspoon shrimp paste
  • 1-teaspoon salt
  • 3 tablespoons oil
Methods/steps
  • Combine all the ingredients into the mortar or blender and process until smooth.
  • Heat a small skillet on medium-high heat and add oil.
  • Slowly fry the curry paste for 5 minutes until fragrant.
  • Remove and store in a jar.
