Hot And Sour Shrimp Soup - (Tom Yam Goong)

  • 8 oz. Shrimp/prawns, shelled and deveined. Don?t throw out the shells!
  • 3 cups water
  • 2 garlic cloves, minced
  • 5 lime leaves
  • 3 thin slices of fresh ginger root
  • ¼ cup fish sauce
  • 2 stalks lemon grass ; use the lower ¼ to 1/3rd portion only, cut into 1 inch lengths
  • 2 shallots, sliced
  • ½ cup sliced straw mushrooms
  • 5 green Thai chili peppers, If you would prefer a soup that isn’t so spicy, lesson the number of peppers used. We like it hot!
  • ¼ cup fresh squeezed lime juice
  • 1-teaspoon red chili paste (see previous recipe)
  • 1 tablespoon chopped cilantro
Methods/steps
  • Rinse the prawn shells and place them in a large pot with water.
  • Heat to boiling, remove the shells and discard.
  • Add the garlic, lime leaves; ginger root, fish sauce, lemon grass and shallots to the stock, then the chili peppers.
  • Cook on medium
  • heat for 15 minutes.
  • Add the shrimp and mushrooms to the soup, and simmer for 3 to 5 minutes, or until the prawns turn pink.
