- 1-tablespoon red curry paste (see earlier recipe)
- 1 ½ cups coconut milk
- 4 lemon leaves
- ¼ cup fish sauce
- 2 tablespoons sugar
- 2 pounds of wild halibut, cut across into 1 ½ in pieces
Methods/steps
- In a large pot over medium heat, stir the red curry paste into ¼ cup of coconut milk. Heat until a thin coat of oil appears on the surface.
- Add lemon leaves, fish sauce and sugar. Stir in the remaining coconut milk. When the sauce begins to boil, carefully place the halibut in the pan.
- Reduce the heat. Simmer the halibut in the sauce for 8 minutes.
- Before serving, gently stir once.
- Serve with Thai Jasmine rice.
