  • 1-tablespoon red curry paste (see earlier recipe)
  • 1 ½ cups coconut milk
  • 4 lemon leaves
  • ¼ cup fish sauce
  • 2 tablespoons sugar
  • 2 pounds of wild halibut, cut across into 1 ½ in pieces
Methods/steps
  • In a large pot over medium heat, stir the red curry paste into ¼ cup of coconut milk. Heat until a thin coat of oil appears on the surface.
  • Add lemon leaves, fish sauce and sugar. Stir in the remaining coconut milk. When the sauce begins to boil, carefully place the halibut in the pan.
  • Reduce the heat. Simmer the halibut in the sauce for 8 minutes.
  • Before serving, gently stir once.
  • Serve with Thai Jasmine rice.
