- 2 cups coconut milk
- 6 thins slices ginger root
- 2 stalks lemon grass - use the ¼ to 1/3rd lower portion only, cut into 1 inch lengths
- 5 fresh limes leaves torn in half
- 8 oz of chicken drumettes with bone (if you prefer use 8 oz of chicken breast) - I prefer the flavor from either the drumettes or chicken wings.
- 5 tablespoons fish sauce
- 2 tablespoons sugar
- ½ cup freshly squeezed lime juice
- 1-teaspoon red chili paste
- ¼ cup cilantro leaves – torn
- 5 green Thai chili peppers, whole
Methods/steps
- Combine the coconut milk with the ginger, lemon grass, lime leaves, cilantro and fish sauce in large saucepan and heat to boiling.
- Add the chicken and sugar.
- Simmer for about 15 minutes.
- Place the lime juice and chili paste in a serving bowl then pour the soap into the serving bowl.
