Chicken Coconut Soup - (Tom Kha Gai)

  • 2 cups coconut milk
  • 6 thins slices ginger root
  • 2 stalks lemon grass - use the ¼ to 1/3rd lower portion only, cut into 1 inch lengths
  • 5 fresh limes leaves torn in half
  • 8 oz of chicken drumettes with bone (if you prefer use 8 oz of chicken breast) - I prefer the flavor from either the drumettes or chicken wings.
  • 5 tablespoons fish sauce
  • 2 tablespoons sugar
  • ½ cup freshly squeezed lime juice
  • 1-teaspoon red chili paste
  • ¼ cup cilantro leaves – torn
  • 5 green Thai chili peppers, whole
Methods/steps
  • Combine the coconut milk with the ginger, lemon grass, lime leaves, cilantro and fish sauce in large saucepan and heat to boiling.
  • Add the chicken and sugar.
  • Simmer for about 15 minutes.
  • Place the lime juice and chili paste in a serving bowl then pour the soap into the serving bowl.
